Grilled Tri-Tip with Oregon Herb Rub

Submitted by: CHIEFWMS
Home Town: Dayton, Ohio, USA
Tri-tip is a California central coast specialty, claimed to have been first introduced in the Santa Maria area. This recipe adds dill, sage, and rosemary to the basic Santa Maria recipe. Tri tip is a flavorful cut of meat that really shines when it is slow grill-roasted or smoked. Great with a green salad or layered onto French bread for a juicy beef sandwich.

Cajun Prime Rib

Submitted by: MATHTUTORRITA
Don't be afraid of all the salt and spice. They provide full flavor through out the meat. The kick comes from the Cajun seasoning that is put on just before grilling. For diners who like less heat you may omit the Cajun seasoning. A great company roast, and everyone can have their meat cooked to their preferred doneness.

Campfire Reubens

Classic Reuben sandwiches toasted over a campfire or on an outdoor grill acquire a special flavor. Make sandwiches with corned beef, Swiss cheese and sauerkraut, then seal them in foil packets, and cook until the bread toasts and cheese melts. Enjoy blissful bites!

If you are looking for a special steak for your sweetie, look no further. This takes less than thirty minutes from start to finish; less if you choose to broil instead of BBQ. Flavorful and easy, this steak is tough to beat. I serve this with brown and serve sourdough bread or rolls. If you're really hungry, crumble some additional bacon and add a baked potato. Add candles and a bottle of full bodied red wine (like a cabernet from the Alexander Valley) for a romantic evening.
