California

The Golden State has emerged as America’s culinary capital. In the late 1970s, California chefs created California cuisine, an innovative hybrid that favors simple preparations using fresh, local, seasonal ingredients. It has also benefited from Asian, Mediterranean, and Latin influences. No fad, California cuisine today is an important contemporary culinary approach that has caught on throughout the country. The Golden State can also claim inspiration for many of our favorite foods. Though the hamburger had been around, the illustrous cheeseburger was invented in Pasadena in 1920. Other California creations include the Popsicle, hot fudge sundae, canned fruit cocktail, and French dip sandwich. In the 1930s, Hollywood's Brown Derby restaurant was the birthplace of both the Cobb salad and Shirley Temple. Creamy Green Goddess Dressing was dreamed up by a San Francisco chef in the 1920s. More recently, the fruit smoothie, fish taco, and California sushi roll have come out of the Golden State to nationwide success. Almost all of America’s almonds, walnuts, olives, artichokes, pistachios, and 9 of every 10 bottles of wine that we drink come out of California.

Polvorones de Canele (Cinnamon Cookies)

Reviewed on Jul. 24, 2008 by Traci B's Kitchen
Really good cookies!.. I quadrupled the recipe because I needed lots of cookies! I doubled the cinnamon in the dough and probably made them about 1 1/2 inch balls cooking them for 15 minutes. The amounts given for the sugar and cinnamon at the end was enough for all my cookies; they obviously suggest way too much! Besides that I was hoping they'd turn out good because I volunteered to bring something in the Mexican theme for our church's "Feed the Homeless" night. Everyone loved them! They are easy to make too. Easier than snickerdoodles which we love and they taste similiar. The powder sugar gives them an interesting melting texture. I will definately make them again!

Skillet Pork Chops with Potatoes and Onion

Reviewed on Jul. 24, 2008 by JeanNeeNer
What an excellent one skillet meal. I too sauteed the onions in butter, removed them and then followed the recipe exactly, except no salt. After 25 minutes it was done. I removed the meat, potatoes and onion from the pan and used a little cornstarch to thicken the juices in the pan to use as gravy over the meal. My husband had his doubts looking at it, but ended up having seconds.
