Zucchini Herb Casserole

Fantastic! I use a box of all natural flavored rice just to make it easier and I add shrimp. My SUPER picky husband said this was one of his favorite dishes. YAY! Thanks!

Angel Chicken Pasta

My boyfriend and I enjoyed the dish although I thought it was a tad salty. I substituted chicken broth for the wine(didn't have any on hand), and maybe that was the reason it was just a tad salty. Overall, an easy to prepare enjoyable dish that I would probably make again.

Good Old Fashioned Pancakes

I made these pancakes exactly as written and oh my goodness. They are so delicious! This is my new staple pancake recipe. If the batter comes out thick, I would add a T of milk at a time until it was 'just' starting to get thin enough to pour. I myself like thicker pancakes, so these were just perfect for my taste! And just a note: Some may like to use Pam to save calories but I use melted butter and just brush the pan before adding each new batch. I really think this type of recipe is best with the melted butter as the fat in the pan. I tried it with Pam and it just didn't taste as good. Pretty fattening with the extra butter but it crisped up the edges and was sooooo yummy! These are a once-a-month treat for us as we are watching our weight but they are wonderful and our only pancake recipe from now on! I'd imagine you could alter it with chocolate chips, bananas, cinnamon, etc if you wanted to. But plain with real maple syrup - to die for pancake recipe!
